December’s recipe: Totally Tempting Mini Christmas Puddings and Christmas Pudding Ice Cream

Totally Tempting Mini Christmas Puddings

The sublime mini Christmas puds first made an appearance at our ‘Steam Up Your Christmas Lunch With V-ZUG’ cooking demonstration in November. Our guests enjoyed a beautifully cooked three-course Christmas meal by James Smith, Head of the V-ZUG UK Gourmet Academy, as he demonstrated the versatility of our V-ZUG combi-steam ovens. But it was his bite-sized Christmas puddings that extended his fan-base considerably.

So, with it being a time of good will and all that, we thought we’d better share. Enjoy.

Ingredients

100g wholemeal breadcrumbs
½ tsp ground nutmeg
½ tsp ground ginger
Pinch of cinnamon
Pinch of salt
50g suet
50g soft dark brown sugar
2 tbsp egg, beaten
150g mixed dried fruit
½ apple, grated
2 tsp orange juice
2 tsp milk
2 tsp treacle
1 tsp honey
1 tbsp Brandy
Brandy sauce to serve

Method

Lightly grease a mini muffin tin
In a bowl mix together the breadcrumbs, ginger, nutmeg, salt, cinnamon, dark brown sugar, suet, dried fruit and grated apple
In a small bowl mix together the milk, orange juice, honey, treacle and egg
Now add the wet ingredients to the dry and mix well
Mix in the brandy
Pack the mixture tightly into the mini muffin tin
Steam at 100°C for 40 minutes
Once cooked, turn out and serve with brandy sauce

Christmas Pudding Ice Cream

This gorgeous treat or accompaniment is great for using up leftover Christmas pudding over the festive period. And it doesn’t require an ice cream machine from Santa either.

Ingredients

3 egg yolks
500ml double cream
70g sugar
2 vanilla pods
leftover Christmas pudding

Method

Scrape out the vanilla seeds by halving the pods lengthways
In a pan, bring the cream to the boil and then add the vanilla seeds and sugar. Stir until the sugar has fully dissolved
In a large bowl, whisk the eggs and then slowly combine the hot cream mixture, gently whisking as you go
Once mixed together, pour the mixture through a fine sieve into a container suitable for the freezer
Stir in your desired amount of crumbled Christmas pudding and freeze
Stir every half an hour or so, until the ice cream has reached your preferred consistency
